it's how much you move your aim via right stick. low means you have 1 or 2 speeds of moving the aim, and you have to pull the right stick pretty far. high is just gently moving the right stick to move just gently. low sensitivity is inaccurate to most, and high is to precise and tedious to some, so medium is the best option for the common player.
